With the dream of promoting a more conscientious approach to our food system while promoting sustainable tourism, the original concept of a an annual festival in Trancoso was born of a collaboration between French culinary pioneer Charles Piriou and the founders of UXUA, Bob Shevlin and Wilbert Das. Several top Brazilian chefs generously volunteered their time including eventual event matriarch Roberta Sudbrock and from very humble beginnings Organic Festival Trancoso became a reality.
